I’ve really been enjoying getting back into having ‘breakfasts’ for lunch or dinner! 😄🍳 Everyone would always associate your typical cooked breakfast as being ‘unhealthy’ but, In fact you can turn it all into a healthy meal, even from just changing the way you cook certain ingredients! 🙋🏼‍♀️ This isn’t the fullest breakfast I’ve had 😂 but it was 100% all I needed. I’ve really been enjoying @lindamccartneyfoods vegan sausages lately. I bought the red onion and rosemary, they are pretty delicious 😋 I buy reduced salt and sugar baked beans (the Asda ones are actually just as good as Heinz!😱) And those beans are my carbs 😍 I used to loooooooove fried eggs ❤️❤️❤️ But as I got older I hated the way it used to literally just cooked in the oil and then be all oily after 😪 so I’ve really been enjoying poached and scrambled eggs the best. Today was a poached egg day... 2 poached eggs actually 🙄🙈 and made my very own garlic mushrooms. Literally crushed garlic, and cooked it with the mushroom 😂 Again all of this was 387 calories (would have been more if I had added my spinach and toasted English muffin 🙄) Macros for this meal was: C:25g • F:13g • P:36g ☝🏽 As you can see, the protein hits the highest in this meal 💪🏽 So don’t be fooled, if you try you can change those ‘unhealthy’ classified meals into a healthy option just by changing a few simple Ingredients or how you cook them 😄👏🏽 . . . #postworkout #fatburning #cutting #nutrition #fuel #energy #macros #myfitnesspal #gymmotivation #fitfam #fitspo #instafood #instadaily #instafit #recipes #foodporn #foodie #strongwomen #strongnotskinny #veganrecipes

Espero que anden todxs más que bien ❤️ Les dejo la receta de estos MEDALLONES DE QUINOA, CALABAZA Y ZANAHORIA para que los prueben! 📝 Ingredientes y procedimiento para 9 unidades : 1) Lavar muy bien 1 taza quinoa, con abundante agua y cambiandola 2 o 3 veces! Hervirla usando 2 tazas de agua (aproximadamente 10 minutos una vez que rompe hervor o hasta que absorba el agua de cocción). 2) Mezclar en un bowl: la quinoa + 3/4 taza de puré de calabaza + 1 zanahoria chica rallada + 1 huevo + 2 cdas de queso rallado (opcional) + 1 rodaja de queso port salut descremado en trocitos + condimentos a gusto, moderando la cantidad de sal. 3) Armar los medallones, utilizando una cuchara, agregar semillitas y llevar al horno hasta que se doren. . No pueden ser más fáciles! Prepará en cantidad y guardá en el freezer para cuando no tenés ganas o tiempo de cocinar! As promised, here it is the recipe for my Peanut Thai Chicken Curry. It can be transformed into a vegan recipe if you change the chicken for chickpeas or lentils. • • • • • • Peanut Thai Chicken Curry: Ingredients: -4 tbsp Garlic -1 Onion -1 Red Pepper -1 Green Pepper -2 Chicken Breasts (for Vegan version sub. for 2 cans of Chickpeas) -Red Curry Paste -1/2 Lt of Coconut Milk -Ginger -Salt & Pepper to taste -Coconut Oil (to your measure) -A big dollop (and with dollop I mean like about 5-6 Tbsp) of Natural Peanut Butter Optional: -Coconut Flakes -Roasted Peanuts Directions: -Fry Garlic with Ginger till golden brown with coconut oil. -Add peppers and onion chopped finely and stir till toasted -At this point you will want to change the heat to medium heat and add the curry paste mixing everything (make sure the curry is not concentrated in one place only) -Combine with Chicken breast chopped in medium chunks. Cook until Chicken gets its pale color. -Add little by little the Coconut Milk, stirring all the time. -Cover with lid and at medium heat let it simmer for 15-30 minutes (depending on your stove) -Once cooked add the Peanut butter dollop. Stir till combined. -Lastly, add the peanuts or coconut flakes (if used). -Serve with rice or any other accompaniment (Here I paired it with Fusilli Whole Wheat Pasta). Enjoy!!

Lemon Cheesecake by @sukrankayaoglu : . Crust: 2 packages of oatmeal cookies (232 gr), 80 gr butter. . Cream: 400 gr cream cheese, 3/4 glass sugar, 200 ml heavy cream, 3 tbsp lemon juice, 2 tbsp cornstarch, 3 eggs. . Lemon Sauce: juice of 2 lemons, 4 tbsp sugar, 1 heaping tbsp cornstarch, 1 glass water. . She used a 22 cm sized springform. . Crust: Melt butter. Blend the cookies. Knead melted butter and cookies until fully combined. Line springform with parchment paper. Press the mixture into the bottom of your springform using a waterglass. Put the springform in the fridge while you prepare the cream cheese filling.Cream: Beat cheese and sugar together. Add in all the remaining ingredients except the eggs and mix. Add the eggs one by one and mix after each egg. Pour the content of the bowl on the crust you have prepared. Bake in the preheated oven at 165°C in the lowest rack for at least an hour. To prevent it from cracking, add a bowl filled with water in the oven or put your springform in a baking sheet which is filled with water. When the cheesecake starts to change its color, reduce the heat and increase the baking time. The center of your cheesecake should still wobble and the edges baked through when it is ready. Leave the oven door ajar and let the cheesecake to cool in the oven for ten minutes before setting it to cool outside and in the fridge.
